Naranjas en Dulce (Oranges in syrup).
For about 4 oranges ( enough for 8 people)
Remove zest from oranges with a vegetable peeler (Note: use peel from oranges to make candied orange peel),
Quarter
Put orange quarters into saucepan and cover with water, add a small amount of salt, boil 25 mins.
Drain, rinse and then soak in cold water for several hours changing water several times
Prepare syrup with 500 ml. water, reserved juice, 2 cups sugar and 1 cinnamon stick.
Cook over medium heat until syrup consistency, add oranges and continue cooking until
Serve at room temp (or cold if you wish) with syrup and fresh cheese
(mascapone/cottage/ricotta, or creme fraiche) garnished with orange leaves and cinnamon stick.
Note:
After cooking I have packed the folded quarters into a jar (the type with a glass lid,
rubber ring and wire clamp), poured over the syrup, and ‘sealed’ them in a Bain Marie in the oven at about 120ºC for 30 mins. or so, and they have kept in the pantry for 6 months plus.
