Dry White Wines

Verdeljo 2007

 

Winemaking notes: First crop fruit was whole bunch pressed

 

Tasting notes: Pristine light gold in the glass. Honey, straw and some citrus characters on the nose. Full palate with rich varietal traits, clean with fresh acid.

 

Food matching notes: Serve chilled with light dishes such as vegetarian or seafood pasta, salads, vegetable or seafood tempura, seafood and shellfish.

 

Viognier 2006

 

Winemaking notes: Fruit was whole bunch pressed.

 

Tasting notes: Bright colour of green/gold. Intense nose filled with honeysuckle and ripe melon.  Mouth filling, rich and ripe with great length and finishing with balanced acidity.  

 

Food matching notes: The aromatics and richness of this wine make it more suited to fuller flavoured dishes– rabbit, duck, green and yellow curries.

 

Dry Red Wines

Shiraz 2006

 

Winemaking notes: Hand harvested from the twenty five year old vines in the Dos Rios Nyah vineyard and traditionally hand plunged in open fermenters.  After eighteen months in aged American oak barriques the wine has been given some bottle age prior to release.

 

Tasting notes: Deep dark ruby red, rich ripe dark berries and plum with a little spice on the nose.  Medium bodied with rich palate, generous soft tannins and fresh acidity on the finish.

 

Food matching notes: This medium bodied wine with it’s soft tannins compliments the traditional red meats such as kangaroo, lamb, beef as well as most of the game dishes including venison, rabbit, duck and other dark poultry.

 

Tempranillo 2006

 

Winemaking notes: Open fermented and hand plunged before being given fifteen months in matured oak barriques.

 

Tasting notes: Dark ruby colour with dark berry notes on both the nose and the palate. Medium weight with supple tannins.  The time in barriques has resulted in generous fruit flavours and the earthiness, typical of the Iberian heritage of this grape, being evident.

 

Food matching notes: The generous fruit flavours and earthiness  compliment the many food styles common to the ‘Mediterranean’ diet, grilled vegetables, Tapas, grilled sardines, braises,  cured meats, ragus, grilled game birds and grilled red meats.

 

Shiraz/Viognier 2005

 

Winemaking notes: The two components were co-fermented and hand plunged in open fermenters then given fifteen months maturation in seasoned French oak barriques.

 

Tasting notes: Deep dark ruby red colour. Mulberry, plum with some spice and just a hint of lift from the Viognier on the nose. Rich palate with soft supple tannins with firm acidity to finish.

 

Food matching notes:  Dark berry notes and subtle tannins suit pasta with meat based sauces, lamb shanks, osso bucco or ratatouille.

 

Lagrein 2007

 

Winemaking notes: Hand harvested fruit traditionally hand plunged and then matured for eighteen months in barriques.

 

Tasting notes: Intensely dark, with the aroma of very ripe blood plums. Soft and fleshy on the palate, mid weight, finishing with soft tannins.

 

Food matching: Duck and game birds, venison, rabbit, kangaroo and meat filled pasta or pasta with rich meat based sauces.

 

Sparkling Wines

Sparkling Pinot Gris 2007

 

Wine making notes: The fruit was harvested early to retain natural acidity. The wine was  made using méthode traditionelle.

 

Tasting notes:  Fresh citrus aromas with hints of spice are immediately evident on the nose.  The wine has a rich round mid-palate with flavours of peach and pear, leading into crisp citrus flavours and a spicy finish.

 

Food matching: Perfect as a starter with cold hors d’oeuvres, tapas, cold crustacea or fresh oysters (at midnight?).

 

 

Sparkling Shiraz  2005 

 

Winemaking notes: Using methode traditionelle this wine was produced from premium Shiraz initially made from hand harvested grapes off 25 year old vines, hand plunged and matured for 18 months in aged barriques.

 

Tasting notes: Dark ruby red, a luscious deep peach pink mousse, with typical Shiraz dark cherry and plum on the nose, soft tannins and a hint of spice.

 

Food matching notes: Serve chilled as an aperitif, with tapas, antipasto, lamb, game bird, game dishes or, for dessert, (quinces  or pears poached in this wine).

 

Sweet White Wines

Moscato Giallo 2008

 

Winemaking notes:  Fermentation stopped at 7.5%, sterile filtered and bottled very cold.

 

Tasting notes: Fresh grape and green apple aromas, with a complex, pleasant character (reminiscent of candle wax) on the finish.  A light, sweet low alcohol  aromatic wine. Enjoy while young and fresh. 

 

Food matching notes:   Serve chilled at breakfast/brunch with eggs Benedict or anytime with fresh berries or cream based desserts.
