Marinated stuffed green olives.

Ideal for those who find olives a bit overpowering.

 

Ingredients

a 375g jar of green olives stuffed with pimento (capsicum)

1/2 teaspoon ground cumin

1/2 teaspoon oregano leaves

1/4 teaspoon rosemary leaves

1/2 teaspoon thyme leaves

2 bay leaves crushed

4 cloves garlic sliced

4 tablespoon vinegar

4 anchovy fillets chopped

Method

1/- Drain the brine from the jar of olives.

2/- In a jug combine all the other ingredients and add enough water replace the brine in the olive jar.

3/- Pour marinade over olives in jar, replace cap and invert several times to ensure garlic and herbs mix throughout the jar.

4/- Refrigerate and use after a day.  They will keep for several weeks.  Best served at room temperature.
