'Dos Rios' Guacamole

 

In a medium size bowl put the following:

 

Flesh of 3 ripe Avocado

1/2 red onion very finely chopped

1 small long green chilli very finely chopped (or a 'birdseye' chilli will do) (a little more or a little less depending on your taste)

1 tablespoon sour cream

Juice of 1/2 lemon

Freshly ground black pepper

A good pinch salt

 

Mash well with a fork.  Leave for about 30 mins for chilli taste to permeate before tasting to adjust seasoning.

 

Serve with water crackers, mini toasts or freshly toasted bread.
