Anchovy and pimento spread.

Ingredients

90g anchovy fillets finely chopped

2 pimento (Roast red capsicum) finely chopped

1/2 cup Spanish (red) onion finely chopped

1 tablespoon finely chopped parsley

black pepper to taste

1 tablespoon olive oil

1-1/2 tablespoon red wine vinegar

Method

1/- Combine all ingredients.

2/- Refrigerate for 1-2 hours to combine tastes.

3/- Serve with small wedges of toast.
